My favourite thing about Cashew Nut Butter is just how versatile it is. The sweet subtle taste mixes beautifully with other flavours which is the main reasons I find it so useful and diverse.

Dark Sweet Cherry Cheesecake – sweet juicy cherries with a hint of almond topping the firm biscuit base and the creamy cheesecake. Just heavenly with a splash of coconut milk and an almond version of my chocolate sauce – yum!!
Seedless Raspberry Jam. Now this is something I love to have in my fridge. It is just soooooooooooooooo handy to have around. You can use it as a topping on pancakes, mini cheesecakes, in the centre of cupcakes in fact I pull this out at any opportunity.
I confess at the moment I am obsessed with Chai Latte. It’s my favourite tea. I have a Light Chai Latte biscuit to go with that tea. I have tried making Chai Latte with soya milk, cashew nut milk and coconut milk and now here comes the best of all – the Chai Latte Ice Cream!
These sweet but spicy little biscuits literally melt in your mouth making them completely irresistible. There is nothing better on a cold winter’s day than a cup of hot tea and a biscuit. We all have our favourites. I won’t deny that mine does change from day to day (sometimes minute to minute) but today I fancy Chai Crumbles.
Cashew Nut Milk is, without a doubt, my favourite nut milk to make. Why? I hear you ask. Because you don’t need to sieve it. All of the nut is taken into the milk. This means all of the fibre and all of the nutrients and none of the mess.
Last month I decided to have a go at some Lemon Curd in order to make this Lemon Curd Slice I had in mind. Well technically I ended up making three batches of Lemon Curd!! I had just bought some Agar Agar
Double the chocolate – double the fun – of course!!! You see I have these chocolate drops in the fridge. It’s not like I need to use them up, I mean after all there is always a place for chocolate drops (I like to take a pack with me to the cinema.)
As far back as I can remember coffee cakes were my Dad’s favourites. Everytime my Mum asked him what he wanted as a cake for his birthday his reply would always be the same ‘coffee!’ When I first started healthy baking I promised myself that I would figure out a healthy coffee cake for him.
Ripe apples, rich caramel, juicy raisins and coconut oat crumble layered together to make one mouth-watering bar.
In my freezer I have a kilo of shredded coconut. In my head I have a desire to make ‘Bounty’ bars and a feeling that they might be needing some coconut butter in the mix.
This recipe is beautifully simple – can be ready in a moment and is perfect poured over pretty much anything. The other night I drizzled it over raspberry cheesecake with crumbled double chocolate cookie – oh wow!
Almonds and cherries, cherries and almonds – is there really any better combination in the world? – As good? – Maybe – Better? – No definitely not and this Cherry Bakewell Tart is so jammed packed with flavour it’s almost impossible to believe how healthy it is!!!!
