Light and fluffy with an intense rich chocolate flavour - so good - honestly I have been dying to share this recipe with you. After all chocolate cake is definitely a staple when it comes to any recipe selection.
When I was about seven my school sent a message home to my parents (I’m sure it was aimed at my Mum) to provide me with two empty and cleaned pineapple tins.
Sweet, nutty with just that balance between a cake and a loaf that makes it perfect for the purpose for which it was first baked – as a base for spreading my healthy chocolate hazelnut spread (Nutella) on!
Until a couple of days back I had never heard of Cattern Cakes (or St Catherine Cakes) - St Katherine’s Dock London mentioned them on their Facebook page with a link to original recipe.

Orange freezer cake oooooh I just love these – so creamy and smooth and sooooooooo easy to make – you simply soak the cashew nuts for at least 4 hours and then blend all the ingredients together until completely smooth (about 2mins!!!!)
Today I am babysitting for my gorgeous little niece and I promised her that next time she came over we would bake together.
