Lemon and Lime Ice Lollies
I’m not kidding when I say these are seriously delicious, super simple to make and an amazing way to sneak green vegetables into your kid’s diet.
My niece owns a talking Disney Thumper toy which I may have bought for her. If you press his paw he quotes lines from the movie.
One of which is (yes I know them all my heart!!!!!) ‘Eating greens is a special treat it gives you long ears and great big feet, but it sure is awful stuff to eat!’
I always found this funny – especially since rabbits are famous for loving their lettuce but it bought it to my attention that is seems to be almost ‘cool’ to hate greens and there can be a lot of peer pressure for children, even from a young age.
So it’s good that Thumper, Snowdrop and Panda all enjoy eating their greens!! ;)
And in what better form than hidden in an absolutely delicious, sweet but tangy, creamy, refreshing ice lolly?
These make a yummy, secretly healthy, full of those oh-so-good-for-you greens, scrumptious treat for kids of all ages.
Btw I leave the peel on the lemons and limes. Just top and tail them but make sure you wash them thoroughly first.
Lemon peel is soooooooooo good for you! It has a wealth of health benefits and is even thought to help protect your skin from sun damage.
Lemon and Lime Ice Lollies Prep Time: 10 mins Freeze Time: 12 hrs Serves 6 Ingredients: ½ a Lemon (wash first, cut off the top but leave on the remaining peel) ½ a Lime (wash first, cut off the top but leave on the remaining peel) 1 Cup Spinach ½ Cup Soya Yoghurt 3-4 tbsps. Honey (to taste) ½ Cup Frozen Pineapple Instructions: 1) Blend together all the ingredients until completely smooth. 2) Pour the mixture into the ice lolly mould. Leave about a 1 cm air gap at the top so the lolly can expand as it freezes. 3) Put the sticks into the lollies and place them in the freezer for at least 12 hrs. 4) Before removing from the mould run under the hot tap for about 30 secs.
(I tested these out on my niece – her verdict was…………….. ’yum……………mmmmmmmmmmmmmm……………..yum!’ and she ate the whole thing! :))
