Plump juicy raisins coated in a delectable coconut milk chocolate – what could be better? I mean I know it is a truth universally acknowledged that a single man in possession of a fortune everything is better covered in chocolate. (Sorry Jane!)

I buy a lot of my products from RealFoodSource and I love browsing their selection (especially their chocolate selection) to find out what’s new. That’s how I first found their delicious, and super useful, coconut sugar chocolate drops – and also how I stumbled across this. Of course I had to try it out – you know me!

It’s a rich, creamy, intense chocolate that will have a permanent place in my cupboard! It’s just great for toppings, coating raisins, as chunks in cookies and, of course, for those days you just want to sit and eat though a bar of awesome chocolate!

I usually like making my own chocolate (especially ‘milk’ chocolate) but here are a few of things that I love most about this chocolate a) it tastes amazing! b) its instantly ready c) has a higher melting point than my own chocolate d) did I mention it’s super yum?!?!?

Now I don’t often use salt in my baking – mostly because I don’t usually crave salt and I like to bake things I am craving! But I’ve been craving salt a bit recently – I guess because I have been exercising a lot which means I’ve been drinking more to keep hydrated – which I expect is my body’s way of telling me I need to replace salt so I don’t lose too much nutrition. So when I made these I decided to sprinkle them lightly with some Himalayan salt.

You don’t need a lot – just a little will do. It tastes great and it also makes them a perfect post work out recovery treat – and we all need them in our lives!! Don’t worry if you don’t fancy/like the salt – they taste amazing without as well (of course I checked it - meant I got to try even more!!!!!!!!)

Salted Coconut Milk Chocolate Raisin Clusters

Prep Time: 10 mins                      Set Time: 4-8 hrs

Makes: 20 Clusters                 

Ingredients: 

100g Bar RealFoodSource Coconut Milk Chocolate

1/3 Cup Golden Raisins

1/3 Cup Black Flame Raisins

1/3 Cup Red Raisins

Pinch of Himalayan Salt

Instructions:

1) Break up the chocolate bar and melt in a bowl over a saucepan of boiling water or in the microwave.

 

2) Remove from heat and slowly stir in the raisins.

 

3) Spoon out clusters of about 5-6 raisins onto a wax proof sheet and lightly sprinkle with salt

 

4) Leave to set for 4-8 hrs..
